Vinification
Hand harvested, destemmed and gently crushed in open lagar. Skin contact for 7 days. spontaneous fermentation with indigenous yeasts

Pressed into old French oak barrels (4-8th year use) where it completes malolactic and ages for about 6 months. 60mg total sulphur added.
