Vinification
Hand-harvested, destemmed and lightly crushed. 3-4 hour maceration with the skins and seeds. Must is pressed and then put into amphora (of various different sizes) where it spontaneously ferments without temperature control.
Aging
4 months of aging in amphora without racking.
