Vinification
Hand harvested, spontaneous fermentation with indigenous yeast in old Manzanilla & Amontillado butts. Minimal sulfur use only initially.
Aging
Aged on the lees with regular bâtonnage in the same barrels for 9-10 months. No cold stabilizing or SO2 at bottling.
