Vinification
Hand harvested, grapes are fermented separately with native yeast in stainless steel tanks.
Aging
Racked into concrete tanks where it ages for about 9 months, through the winter, to clarify naturally. Annual production is around 5,000-11,000 bottles depending on vintage.
