Vinification
Grapes are hand harvested, 70% are whole cluster for carbonic maceration and 30% traditional (Pipeño method) of being destemmed, manually punched down, and fermented in open tanks with native yeasts for 2 weeks.
Aging
Kept in old used barrels for 10 months.
