Vinification
Hand harvested with the help of a mule, crushed, spontaneous yeast fermented in stainless steel tanks between 10-20 days.
Aging
Minimum of 2-3 months in stainless tanks (sometimes longer depending on temperatures at their altitude). Bottled as a Brut.
