Handpicked, foot treading for 2h and slow pressing to allow hyperoxidation of the must. Indigenous yeasts fermentation. Alcoholic and malolactic fermentation in used un-toasted old oak barrels.
Aging
6 months on the lees before racking. 30mg total sulphur added.
