Hand harvested, foot trodden for 2-4 hours. Indigenous yeast fermentation for around 7 days in stainless tanks.
Aging
Gentle pressing into old (4-8th year use) neutral barrels where malo finishes and it ages for 6 months. 30mg of SO2.
