Vinification
Hand harvested (in February) and fermented separatly. Muscat (as with their other wines) goes into maceration with the skins for one week. The other two varieties are fermented with native yeasts in concrete tanks.
Aging
Wines are eventually blended and bottled unfined, unfiltered, and zero added SO2.
