Harvesting hand, grapes are destemmed, vertically pressed, and fermented in stainless steel with indigenous yeasts.
Aging
12 months in old American oak (usual for the region, like in Jerez) under a layer of flor much like a Manzanilla or Fino sherry but without the fortification.
