Vinification
Manual harvest in boxes of 15 kg. Whole cluster (carbonic maceration) for 9 days, pressing and spontaneous fermentation in 30% amphora and 70% stainless steel tank.
Aging
In 50% chestnut barrel, 50% stainless on fine lees for around 5 months after harvest.
