Vinification
Grapes are hand harvested. Vinification is carried out in open 1000 liter tanks. Spontaneous fermentation, maceration between 25 and 30 days, with gentle daily manual pumping over.
Aging
Spontaneous malolactic and aging in used French oak barrels.
