Vinification
Hand harvested, destemmed, spontaneous fermentation in steel tanks with native yeasts and then malolactic in used 10 year old French barrels.
Aging
In used 10 year old French barrels followed by aging for 18 months. Bottled in September 2019 and then rested in bottle for a year and a half minimum before release.
