Vinification
Hand harvested, with skin maceration between 8 and 10 hours, and cold decantation for 36 hours. Spontaneous fermentation in cold stainless steel tanks of 5000L.
Aging
Méthode Traditionnelle: 2nd fermentation with indigenous yeasts, minimum aging of 24 months. Disgorged by hand, only upon ordering. No dosage.
