Manual harvest. Whole bunch pressing in a basket press with 550 liters of extraction. Hyper-oxidation of the must. Fermentation of unsettled must in secondand third-year tight grain oak barrels of Damy, François Freres & Cavin tonnelleries.
Aging
10 months in the same barrel with its total lees, with Bâtonnage once mid-winter when lees are fully compacted.
