Vinification
Hand harvested. Grapes are macerated and lightly pressed. Wild yeast fermentation in stainless steel. Coupage of two stainless steel tanks, one of them with malolactic fermentation and lees worked, the other one no malolactic and no lees.
Aging
In stainless steel for several months after harvest. 4,000 bottles annually.
