Vinification
Hand harvested, maceration prior to soft pressing. Fermentation with controlled temperature in steel tanks. All native yeasts.
Aging
In used French barrels of 225 and 500 liters for 9-10 months. No malolactic fermentation. 2 months in bottle before release.
