Vinification
Hand harvested, fermented separately: Albillo in stainless steel and Albarin in used demi-muid (600L French oak barrels) with indigenous yeasts.
Aging
13-14 months (two winters) before blending begins. The two grapes age together for 3 to 6 months depending on the year.
